Baked Salmon Cucumber Bites with Spicy Mayo! Delicious bites of goodness and so easy to make! This can be a light lunch, snack or even an appetizer plate! Make them and enjoy!

It’s officially Spring and the weather is finally beautiful and nice! Lately, I’m all about easy recipes and I’m loving eating fresh cucumbers with smoked salmon. I just slice the cucumber into rounds and wrap them, or top them with smoked salmon, pickled red onions and everything bagel seasoning, as pictured above. They are soooo good! 

Baked Salmon Cucumber Bites with Spicy Mayo!

After trying the smoked salmon, I thought baked salmon and spicy mayo would be magical. Mother’s Day is right around the corner and I feel like Spring is Brunch and entertaining season! Try these delicious and filling salmon bites and enjoy! If wanting to skip the cucumber, feel free to use crackers or even small toasted bread (crostini). I highly recommend adding the spicy mayo! These bites are everything: fresh and crisp because of the cucumber, spicy and creamy because of the spicy mayo, delicious and savory because of the baked salmon, sour, sweet and crunchy with the pickled red onions. It’s a joyous explosion in your mouth! You’ve got to try this!

Baked Salmon Cucumber Bites with Spicy Mayo!

Ingredients

For the salmon:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 teaspoon Chile lime seasoning blend

For the spicy mayo:

  • 3 to 4 tablespoons kewpie mayo
  • 3 to 4 tablespoons sriracha
  • splash lemon juice to taste; optional

For the salmon cucumber bites:

  • 1 to 2 seedless English cucumbers cut into rounds
  • pickled red onions recipe below
  • furikake (Japanese Rice Seasoning)

Instructions

For the salmon:

  • Preheat oven (or air fryer) to 425 degrees. Line a baking sheet with parchment paper, add the salmon fillets, lightly drizzle with olive oil, season with salt and pepper and season with the Chile lime seasoning blend.
  • Bake in the oven for 9 to 10 minutes. Remove from oven and set aside.

For the spicy mayo:

  • Mix together the kewpie mayo + sriracha until well combined. Taste and adjust anything as needed. If you don't want it that spicy, mix together more mayo and use less sriracha. If wanting some brightness and acidity, add a little fresh lemon juice and mix again.

For the salmon cucumber bites:

  • Arrange the cucumber slices on a platter, top with a little spicy mayo, top with a piece of baked salmon, pickled red onions and sprinkle furikake over the top. Enjoy!
